Our heritage turkeys provide pest control for our farm therefore allowing us to grow award winning vegetables. They also provide a healthy food source as a roasting bird or older birds as ground turkey. We sell ground turkey for $20/lb and this recipe is a great way to use it.
Turkey Lettuce Cups
Ingredients:
2 tbsp Butter
1 red pepper
1 medium yellow onion
2lbs Ruckl Farm ground turkey
Shiitake mushrooms
2-4 cloves garlic
Crushed red pepper
1-2 inches Fresh ginger, grated
Tamari to taste
Rice vinegar
Sriracha, optional
1/4 cup Peanut butter
Half a bunch Cilantro, chopped
Head of Lettuce
Instructions:
Dice the onion and red pepper.
Add to skillet with a couple tablespoon butter and crushed red pepper. Sauté on medium high heat until onion begins to brown. Add ground turkey, garlic, ginger and turn heat down to medium. Add tamari and peanut butter and a splash of rice vinegar. Continue to cook on medium stirring often as turkey continues to cook through, when turkey appears almost done add chopped shiitakes and a little more tamari. Stir until turkey is cooked through. Serve on lettuce leaves and top with fresh cilantro and sriracha (optional). Eat like little tacos with the lettuce acting as a shell for the turkey filling. Enjoy!
